A Crash Course in Varietals, Chapter 3
- Pinot Noir -- Pinot Noir is a red wine of light to medium body and delicate, smooth, rich complexity with earthy aromas. It is less tannic than a Cabernet Sauvignon or a Merlot. Pinot Noirs exude the flavor of baked cherries, plums, mushrooms, cedar, cigars and chocolate. Pinot Noir grapes are grown around the world, mostly in the cooler regions, but the grape is chiefly associated with the Burgundy region of France. By volume most Pinot Noir in the United States is grown in California, with Oregon coming in second. Other regions are Washington State and New York. During 2004 and the beginning of 2005, Pinot Noir became considerably more popular in the U.S., Australia, New Zealand and Asia because of the movie Sideways.
Discover a fine example of Bourgogne Pinot Noir with our Guy Chaumont 2004.
- Cabernet Sauvignon -- Cabernet Sauvignon is a red wine known for its depth of flavor, aroma and ability to age. It is mainly used for wine production, and is, along with Chardonnay, one of the most widely-planted of the world's grape varieties. Cabernet Sauvignon may have noticeable tannins. As a group, Cabernet Sauvignon wines are generally full-bodied and intense with a stronger flavor than Merlot and a smooth, lingering "finish." Cabernet Sauvignon has a well-defined aroma. In Old World wines, particularly those made in Bordeaux, this is characterized by a smell of violets, blackcurrant, cedar and spice. New World wines of this grape can often share the aromas of their Old World counterparts, but are more often dominated by aromas of chocolate, ripe jammy berries, oak, pepper and earth. In Australia, there is often a strong smell of eucalyptus, particularly in wines made in Coonawarra.
For an interesting take on this varietal try our Mas de Janiny Cabernet Sauvignon 2003. A great vintage from Languedoc this wine can easily compare with many a Californian!
Next issue: Syrah/Shiraz, Petite Sirah and Merlot.

Chicken Noodle Stir-Fry
This is a quick, tasty meal -- and you can use whatever vegetables you have on hand at the time.
Ingredients -- Serves 6
- 1-1/2 (3 ounce) packages chicken-flavored ramen noodles
- 1-1/2 pounds boneless skinless chicken breasts -- cut into strips
- 1 tablespoon and 1-1/2 teaspoons vegetable oil
- 1-1/2 cups broccoli florets
- 1-1/2 cups cauliflowerets
- 1-1/2 cups sliced celery
- 1-1/2 cups coarsely chopped cabbage
- 3 medium carrots -- thinly sliced
- 1-1/2 medium onion -- thinly sliced
- 3/4 cup fresh or canned bean sprouts
- 3/4 cup teriyaki or soy sauce
Directions
- Set aside seasoning packet from noodles. Cook noodles according to package directions. Meanwhile, in a large skillet or wok, stir-fry chicken in oil for 5-6 minutes or until no longer pink. Add vegetables; stir-fry for 3-4 minutes or until crisp-tender.
- Drain noodles; add to the pan with contents of seasoning packet and the teriyaki sauce. Stir well. Serve immediately.

Hospital Remotes Carry Bacteria
According to a review published in the the New England Journal of Medicine, infections acquired by patients while they're in the hospital are estimated to affect nearly 2 million people resulting in 90,000 deaths a year and costing $9.5 billion in medical bills.
The biggest culprit? The room's TV remote control!
Researchers from the University of Arizona recently found that the remote control in a hospital room carries more disease-causing bacteria than the toilet, faucet handles, bathroom door, call buttons, and other more obvious suspects. The study recommends the widespread use of disposable remote controls to protect patients during their hospital stays!
My! Another great idea! Rather than adding more garbage in our landfills why not use a fabulous organic cleaner like ORANGE TKO? It has lots of uses around the house, works wonders and smells good. Give it a try, if you don't know it already.
