Cabernet Wines
Simply put, Cabernet Sauvignon is the undisputed king of red wine grapes. Native to Bordeaux, but doing well in Australia, California and the Pacific Northwest, Cabernet wines are complex and rich. For some, there is no other red wine. Many wine experts say that the Cabernets known as Medoc, which hail from Bordeaux, are the finest wines in the world.
The Cabernet Sauvignon grape contains hints of rich, dark fruit. Young Cabernets can be a bit much; the high levels of tannin make them "bite" a bit. But like the great ladies they are, Cabernets become more beautiful as they age. Because of high tannins, Cabernets are often combined with other grapes to create mellow blends. Pure Bordeaux, for instance, pairs Cabernet Sauvignon with Merlot. Cabernet Sauvignon is also frequently paired with Cabernet Franc, another deep red grape, but one which is less tannic and smooths Cabernet Sauvignon's youthful hard edges.
Forewarned is forearmed: the best and brightest Cabernet Sauvignons are without question also the most expensive. Few other grapes grown in California or Washington can boast $100 a bottle prices upon release. The Medoc wines of Bordeaux are wonderful--breathtaking even--but then, so are their price tags.
