The main varietals used in these wines are Carginane, Syrah, Grenache and Mourvedre in different proportions. The yields are very low since the are is fairly dry and no watering is allowed. The soil is mostly made of clay and rock. Wines are kept in old oak barrels called foudres with the best going into small ones. These wines are dense, well extracted with a deep color and a strong sense of belonging to a specific terroir, that unique combination of soil, climate, vegetation and man's ingenuity and adaptation to his milieu.
