History tells us that Blanquette de Limoux, the world's first sparkling wine, dates as far back as 1531. At the time, the monks of the Benedictine abbey of Saint-Hilaire, near Limoux, were producing a somewhat unusual white wine in their cellars. Inside its glass flask, with a cork top - very rare for wines at this time - it acquired a natural sparkle. This was the forefather of the brut which is tasted today at the world's most prestigious tables.
Since they first started cultivating vines, the growers of Limoux have aimed at maintaining the originality of the Blanquette de Limoux growth and developing its quality. The region's surrounding hills protect it from the extremes of the Mediterranean and Atlantic climates, with the area enjoying a microclimate particularly suitable for making quality white wine. The vines classified in the appellation are always planted at the top of southern-facing slopes, giving the best exposure. The soil here is shallow and sparse, full of chalk and stone. The surface area of the vineyards is restricted by quota, the yield is limited, and the grapes are picked manually only, in sections, at the ideal stage of ripening.
Two exclusively white grape varieties: Mauzac and Chardonnay form the basis of the blend for Blanquette de Limoux. Mauzac, the growth's traditional variety, gives body and aroma. Chardonnay, its irreplaceable partner, reinforces the bouquet, the freshness and the finesse.The result is a dry, creamy-textured, full-bodied wine with a fine yeasty character present in the aroma. Subtly fruity, with toasty green apple and lemon flavors. Tastes very clean yet with a long full finish.

Domaine de Clairac -- This fruity, spicy red wine is grown just west of the ancient city of Beziers, in the Languedoc region of southern France. Francoise Jougla, the owner of Domaine de Clairac, and her father Claude, have been involved in French organic viticulture since its rebirth during the 1960s. Their expertise in the field is widely respected throughout France. The health and richness of their wines, and the vines where they come from, reflect the decades of biological activity maintained in their soils. Francoise has been managing the family estate and all winemaking with a palate educated since childhood. The 2003 vintage is a blend of 70% Grenache, 10% each Syrah, Merlot, and Cabernet Sauvignon. The Grenache expresses much of the flavor and body common to Languedoc red wines. Merlot and Cabernet add finesse and ripe fruit flavors. Domaine des Cedres -- Domaine des Cèdres is located in a small commune in France's Southern Rhône Valley. Often called a "Blessed Region," the Rhône Valley is in a climate that is ideal for grape growing. The vineyard features several plots on hillsides which have a stony, clayey and calcareous soil which are friendly to vines and little else. The stones absorb the hot summer sun and then reflect warmth onto the vines at night. The climate is mediterranean, although the Mistral, a cold northerly wind that can endure for days on end, is a feature of the Southern Rhône. Chateau Bousquette -- The vineyards of Château Bousquette, a 50 acre family estate, drape over the craggy hillsides of a small town called Cessenon, only 30 miles inland from the Mediterranean in the South of France. "Bousquette" (pronounced boo-sket) in French means thicket or grove. The word aptly describes the property: a simple family estate nestled in pine trees, lavender and thyme, overlooking miles of vineyards stretching all the way to the foot of the volcanic mountains, the Cévennes.The vineyards are moderated by the cooling breezes from the sea, giving the grapes a long, even growing season.
