Since 1987, the vineyards have been cultivated organically, in accordance with the standards adopted by the EEC.The farming methods are meant to be the reflection of true nature. The vines grow along the rocky hillsides, where the fauna and flora develop with exuberance, where every living thing finds a little piece of land in which to thrive. It is in this Languedoc countryside that Lucien Bourguet created his warm, hearty wines. Following in his father’s footsteps, André Bourguet carries the family torch of respect for the tradition of wine making without chemical processing nor added sulfites.Cartagène, a traditional aperitif of the Languedoc, was formerly created by winemakers for their personal consumption. The grapes are harvested at high maturity (14 to 15.5 Brix) to get the maximum amount of sugar. They are then laid to macerate in oak barrels for a full year, with the winery’s own 'eau de vie'.
