2009 Sauvignon Blanc
Ventura -- Crisp and Refreshing. On the palate, soft aromas of mineral and hay compliment stone fruit and light peach notes. On the palate crisp flavors of citrus accents grass and clay.
Cold maceration for 6 hours at 8 degrees C. The juice is extracted using the weight of the fruit pumping it to stainless steel tanks for decanting. Fermentation takes place in stainless steel tanks at controlled temperatures of 12-15 degrees C. Selected yeasts without genetic modification were used. The wine is stored on its lees for the next 5 months to obtain a higher aromatic compound extraction. The wine is then clarified using bentonite clay, cold stabilized and filtered before bottling. Sealed with a screwcap.
Pairing suggestions: Grilled pork sausage or Quinoa salad with beets, goat cheese and toasted hazelnuts.
Certificate: Grapes have been certified organic by IMO Institute for Market ecology, Gmb, and are compliant with USDA’s National Organic Program.

Chardonnay Organic 2009 -- Fabril Alto Verde is an old, medium sized bodega owned by the Drs. Nale, father and daughter. They took the risk of certifying the vineyards and bodega organic via Argencert (the leading EU recognised organic certification body for Argentina) long before this became fashionable and have just won a prize for their passionate and pioneering approach to their wine business.
Green colour with golden glints. It presents tropical fruit aromas in the nose with exotic notes and white flowers. Voluminous, fresh, balance and nice palate in the mouth.
The grapes were pressed quickly, the juice was chilled for cold settling and fermentation was controlled and clean. Some of the wine has since been lees stirred; some has been oak age and some has undergone a partial malolactic fermentation before blending.
This is a fully certificated wine made from organic grapes according to Argencert rules.

A powerful, intense and lasting start in the nose. Tropical fruit preserve aromas, pineapple and mango, a Mediterranean fruit, ripe apple background. Aromatic reminiscences of the vine shoots because of the special cold maceration.

These finicky, late-ripening grapes are usually harvested around the middle of October and can be vinifed in a range of styles from austere, mineral, and refreshing to rich, honey-sweet, and even sparkling.
This Petit Coteau off-dry Vouvray is a soft wine with good balance between the high acidity of the grape and the residual sugar. It’s spicy and fragrant and has full, rich notes of melon, nectarine, and red apple. It’s not complex, but it’s aromatic and inviting, with a pleasing sense of depth. Perfect as an aperitif, with salads, fish and white meats, and spicy oriental foods!

This dry Vouvray (Les Grenouilles means frogs!) is a medium-bodied with has deep, full flavors of peach, melon and quince, and are ripe and forward until the finish, and has a long, delicate honey finish. It is excellent as an aperitif, with sausages, shellfish, fruits, and cheeses.
