Château Véronique -- Véronique Raskin's family started growing grapes in the south of France in the late 1700's. Grapes led to wine, and their 50 acre family estate, Château Bousquette, in the South of France, became a working winery soon thereafter. Still, it wasn't until 1993 that Véronique's brother and Bousquette's winemaker, decided to bottle a wine in honor of Véronique's pioneering efforts to promote organically grown wine in the United States."Bousquette" (pronounced boo-sket) in French means thicket or grove. The word aptly describes the property: a simple family estate nestled in pine trees, lavender and thyme, overlooking miles of vineyards stretching all the way to the foot of the volcanic mountains, the Cévennes.The vineyards are moderated by the cooling breezes from the sea, giving the grapes a long, even growing season. One of our earliest picks! -- Domaine des Cèdres is located in a small commune in France's Southern Rhône Valley. Often called a "Blessed Region," the Rhône Valley is in a climate that is ideal for grape growing. The vineyard features several plots on hillsides which have a stony, clayey and calcareous soil which are friendly to vines and little else. The stones absorb the hot summer sun and then reflect warmth onto the vines at night. The climate is mediterranean, although the Mistral, a cold northerly wind that can endure for days on end, is a feature of the Southern Rhône. The dry Mistral winds, however, minimize vine disease and dry out the vineyard if hit with summer rains.Domaine des Cèdres winemaker, Dominique Pons, is a true pioneer of organic viticulture. NO ADDED SULFITES RED! -- Back in January, in the French town of Narbonne, we met (my dear friend and assistant Claudia, our partner Paul Chartrand and myself) with Didier Cabannes, a local winemaker. This simple presentation around a table and a few glasses ended up lasting 2 hours such was the interest this man and his wines generated! First, let me tell you that Didier does not go around unnoticed! Massive, solidly planted, with powerful hands, a good smile and a strong regional accent, you’re bound to remember the encounter!
To begin with, Didier is a healer, and not one sanctioned by a diploma but one who has so much energy in his hands that he HAS to offer it to the people he is drawn to! This side of his personality alone was worth the meeting but then he went on to explain how he brought to his vineyard his exceptional perception of energy in living things. How he takes every conceivable step from the ground up to end up with wines that have a rare flavor of authenticity!

Our All-Time Favorite!! -- The vineyards of Château Bousquette, a 50 acre family estate, drape over the craggy hillsides of a small town called Cessenon, only 30 miles inland from the Mediterranean in the South of France. "Bousquette" (pronounced boo-sket) in French means thicket or grove. The word aptly describes the property: a simple family estate nestled in pine trees, lavender and thyme, overlooking miles of vineyards stretching all the way to the foot of the volcanic mountains, the Cévennes.The vineyards are moderated by the cooling breezes from the sea, giving the grapes a long, even growing season. After a 10 day maceration period, the new wine is racked and pressed into large barrels and aged for about 18 months. The result is a dry, Rhône-style wine that is typical of southern France. Aromas of berry, leather and spice. Very smooth and mouth-filling flavors of ripe plums and black cherry fruit. Domaine Delmas -- Domaine Delmas is produced at the property of Domaine la Batteuse, a 50 acre, family owned vineyard that has grown considerably over the past 20 years. It is located in the tiny village of Antugnac, about 45 minutes from the famous city of Carcassonne. Grape growing is the only economic resource of the village, which has just 250 inhabitants, and 4 producers. The microclimate is ideal for growing white grapes. The vines are planted on clay, calcareous slopes exposed to the south or southwest. The Domaine Delmas AOC Limoux is a handcrafted labor of love. The freshly pressed white wine is immediately put into 2-3 year old French oak barrels, where it is left in contact with the fine lees and stirred every 8 days for 12 months. The breeding on fine lees with a regular batonnage (gentle agitation of the wine, which puts the yeasts back in suspension) makes it possible to exploit all the aromatic potential of the grapes. 90 Points By Wine&Spirits Magazine -- History tells us that Blanquette de Limoux, the world's first sparkling wine, dates as far back as 1531. At the time, the monks of the Benedictine abbey of Saint-Hilaire, near Limoux, were producing a somewhat unusual white wine in their cellars. Inside its glass flask, with a cork top - very rare for wines at this time - it acquired a natural sparkle. This was the forefather of the brut which is tasted today at the world's most prestigious tables.Since they first started cultivating vines, the growers of Limoux have aimed at maintaining the originality of the Blanquette de Limoux growth and developing its quality. The region's surrounding hills protect it from the extremes of the Mediterranean and Atlantic climates, with the area enjoying a microclimate particularly suitable for making quality white wine.
