Coteaux du Languedoc
Chateau Veronique -- Véronique Raskin's family started growing grapes in the south of France in the late 1700's. Grapes led to wine, and their 50 acre family estate, Château Bousquette, in the South of France, became a working winery soon thereafter. Still, it wasn't until 1993 that Véronique's brother and Bousquette's winemaker, decided to bottle a wine in honor of Véronique's pioneering efforts to promote organically grown wine in the United States."Bousquette" (pronounced boo-sket) in French means thicket or grove. The word aptly describes the property: a simple family estate nestled in pine trees, lavender and thyme, overlooking miles of vineyards stretching all the way to the foot of the volcanic mountains, the Cévennes. The vineyards are moderated by the cooling breezes from the sea, giving the grapes a long, even growing season. The result is Château Véronique, a dry, medium-bodied wine with a jammy fruit character of cherry, plum and blackberry complemented by aromas of straw and oak.AOC Coteaux du Languedoc40% . . .

Cotes-du-Rhone
Domaine des Cedres -- Domaine des Cèdres is located in a small commune in France's Southern Rhône Valley. Often called a "Blessed Region," the Rhône Valley is in a climate that is ideal for grape growing. The vineyard features several plots on hillsides which have a stony, clayey and calcareous soil which are friendly to vines and little else. The stones absorb the hot summer sun and then reflect warmth onto the vines at night. The climate is mediterranean, although the Mistral, a cold northerly wind that can endure for days on end, is a feature of the Southern Rhône. The dry Mistral winds, however, minimize vine disease and dry out the vineyard if hit with summer rains.Domaine des Cèdres winemaker, Dominique Pons, is a true pioneer of organic viticulture. He has been into organic winemaking for at least 20 years, and was one of the first in the Côtes-du-Rhône AOC to go organic. In addition, he's been studying and applying the principles of Biodynamic farming at Domaine des Cèdres for several years, and is involved . . .

Casina di Cornia -- Casina di Cornia is a small estate situated in the heart of the Tuscan hills of Italy. The vineyards exposed to the southwest are planted with the grape varieties of the Chianti: Sangiovese & Canaiolo for the red wine, and Trebbiano & Malvasia for the white.Since 1980, the estate has been cultivated according to the methods of organic agriculture. In order for the wine to maintain its genuine quality and perfume, intervention on the grapes and wine are kept to a minimum. This begins with a pruning policy which reduces the average yield to just 50hl/hectare (or 500 gallons per acre). During harvest, in order to avoid bruising the fruit, grapes are collected by hand in small crates. In the cellar, the vinification is conducted with accurate control of temperature and oxidation. For the past 12 years, Casina di Cornia has been a member ECOCERT, an independent organic certification agency. Gamay Beaujolais
Chateau de Boisfranc -- Château de Boisfranc is located on the plateau of Jarnioux in the heart of the Beaujolais region of Eastern France. Here, the Gamay grape reigns supreme. It is made into a popular "nouveau" wine each November and flown quickly to the U.S. for celebrations around Thanksgiving. In France, the region's nouveau wine traditionally was shipped to Paris bistros each fall, where it was enjoyed as a light quaffing wine to celebrate the new vintage.Gamay's ripe, sensuous fruit flavors make it an ideal nouveau wine, but it also can be made into a heartier springtime wine to enjoy for 1-2 years after bottling, when it is at its peak of freshness and flavor.Thierry Doat has taken over this estate from his father Robert. Both men began conversion to organic agriculture in 1982. Today, the estate vineyards carry the certification of Biofranc and Ecocert, two French organizations that support organic farmers.Château de Boisfranc's vines are close to 60 years old and produce less than younger vines, but . . .

After a 10 day maceration period, the new wine is racked and pressed into large barrels and aged for about 18 months. The result is a dry, Rhône-style wine that is typical of southern France.
